Birra Beef Quesadilla

A gluten-free wrap filled with tender hand-shredded beef marinated in an adobo made of vinegar, dried chiles, garlic, and herbs and spices before being slow cooked in a broth.  Brought together with a low-fat cheddar jack cheese finished on the grill top.
